Cherry marzipan sheet cake is a quick and easy dessert to bake. It’s such a simple recipe, perfect for beginners to hone their baking skills.
While cleaning out the pantry the other day I found a jar of cherry compote and a package of marzipan leftover from last year’s Christmas baking. Immediately I had a vision of a rich yet light and airy cake with pieces of marzipan and cherries in every bite. Half an hour later my vision came to life.
The cake is buttery and soft. And pieces of sweet, sticky marzipan and tart, juicy cherries will surprise and delight your taste buds. It’s a beautiful combination of flavors and textures that complement each other.
Cherry Marzipan Sheet Cake
INGREDIENTS
3 eggs
80 g butter, melted
200 g buttermilk
1 tablespoon vanilla extract
130 g caster sugar
200 g cake flour
½ tablespoon baking powder
Pinch of salt
200 g marzipan, cut in small cubes
340 g cherries, frozen or from compote, drained
INSTRUCTIONS
Line a 30×20 cm (11×7 inch) pan with baking paper.
Heat the oven to 170°C (340°F).
In a bowl mix together flour, baking powder and salt
In another bowl mix together eggs, butter, buttermilk, sugar and vanilla.
Add flour to the egg mixture and mix until well combined.
With a spatula stir in marzipan.
Pour half of the batter into a pan and evenly spread half of the cherries. Then pour the rest of the batter and spread the rest of the cherries on top.
Bake for 25 minutes or until the top gets a nice golden color.
Take out of the oven and leave it to cool slightly.
It’s delicious warm and cold, with a cup of coffee.
