These are the best plant based chocolate muffins I have ever made. They are full of flavor, rich, moist and deliciously sweet. I add homemade chocolate chips and chopped peanuts to the batter for a little crunch and extra bursts of chocolate.
Recipe is quick and easy to make. With only 10 minutes of preparation and less than 30 minutes of baking, you can eat these delicious chocolate muffins in less than an hour.
If you are on a plant based diet for some time now, then you probably have all these ingredients ready on hand. If not, no worries, all ingredients are simple and easily available.
Recipe makes 6 muffins.
Ingredients
1 3/4 cup oat flour*
2 tablespoons cocoa powder
2 teaspoons baking powder
Pinch of salt
3/4 cup plant milk (oat, soy, almond…)
1/2 cup peanut butter
1/4 cup honey**
1/4 cup apple puree
1 flax egg
Optional
1/4 cup chocolate chips***
1/4 cup chopped peanuts
Instructions
- Start by lining the muffin pan with paper liners.
- Then preheat the oven to 365° F (185°C).
- Make a flax egg by mixing 1 tablespoon of ground flax seeds with 2 tablespoons of water.
- In a bowl combine flour, cocoa powder, baking powder and salt with a whisk.
- In another bowl add milk, peanut butter, honey and apple puree.
- Whisk until combined.
- To the flour mixture add wet ingredients and flax egg.
- Whisk until you reach homogeneous batter.
- With spatula stir in chocolate chips and peanuts, if using.
- Divide batter equally among muffin cups, filling them up full.
- Bake for 25-30 minutes.
- Check for doneness with a toothpick.
- Leave the muffins to cool before eating.
- Store them in an airtight container in the fridge, not longer than 5 days.
* If you don’t have oat flour you can make it by processing rolled oats in a blender or coffee grinder.
** If you don’t like honey you can substitute it with the same amount of date syrup.
*** I make my own chocolate chips with cocoa butter, cocoa powder and date syrup.
Chocolate Chips
2 tablespoons cocoa butter, melted
2 tablespoons cocoa powder
1 tablespoon date syrup
- With spatula combine all three ingredients together.
- Pour the chocolate in a piping bag, cut out the tip so you get a small hole.
- Pipe out chocolate chips.
- Leave them to cool and harden before using.
