One of my favorite things about fall are all the delicious pumpkin desserts. Warming and comforting pumpkin pie spice and pumpkin purèe are two things I always have on hand throughout the fall season. I make them myself every year because it’s simple and it makes every dessert so much more special.
Here is how I do it.
Homemade pumpkin pie spice mix:
4 tbsp cinnamon
2 tbsp ginger
2 tbsp nutmeg
2 tbsp allspice
1 tbsp cloves
1/4 tbsp cardamom
Add all of the spices in a bowl and mix to combine. Transfer the mix into a glass jar and store in the fridge. I like to buy whole nutmeg, allspice, cloves and cardamom and grind them myself, that way the aroma is more fresh. For the same reason I keep my spice mix in the fridge, it’s flavor stays fresh and strong longer than if I kept it in cabinets.
Homemade pumpkin purèe:
For homemade pumpkin purèe choose sugar pumpkins or winter squashes.
Cut them in half and take the seeds out. Place them on a baking sheet, lined with baking paper, cut side down. Bake the pumpkin at 350°F (175°C) for approx. 30-50 minutes, depending on the size, or until you can easily pierce it with a fork. Leave the pumpkin to cool enough to handle. Then carefully remove skin from the flesh. Place the flesh into a food processor (or a bowl if you’ll be using a hand blender) and blend it on high speed until smooth and creamy. Portion prepared purèe in freezer bags (2 cups are roughly 1 15 oz can) and store it in the freezer for up to 3 months. When ready to use, you can thaw it in the fridge for 12-24 hours, in a microwave or in a pot on a stove on low heat.
When you have two main ingredients ready you can start making delicious pumpkin desserts anytime.
